Brilliant Beef

Beef fillets with shallots and Guiness

Serve with greens and creamy mashed potatoes.
Prep.time 10 mins cooking time 30 mins serves 4

Ingredients:
2 tbsp olive oil
625g beef fillet
12 shallots
2 red onions sliced
1 tbsp tomato puree
3 garlic cloves
600 ml Guinness
3 sprigs of thyme
salt and pepper
25g butter (dairy free is fine)
1 tbsp flour (gluten free is fine)
2tbsp chopped chives,to garnish

You will need:

Frying pan / Casserole dish

Method:
  1. Heat half a tablespoon of olive oil in a frying pan. Add the beef and sear on all sides, making sure the fillet is well browned.
  2. Heat the remaining olive oil in a casserole dish. Add the shallots, red onion, tomato puree and garlic then fry, stirring often, until softened and slightly browned.
  3. Add in the beef fillet, Guinness and thyme. Season with salt and pepper. Bring to the boil, reduce the heat and simmer for 20 mins. 
  4. Remove the beef fillet and put aside to rest, keeping warm.
    Bring the Guinness mixture to the boil. Meanwhile, rub the butter and flour together. Add to the sauce a little at a time, stirring until absorbed to thicken the sauce.
    Serve the beef with mashed potato and spoon around the liquor. Sprinkle the chives over the top.
